Mardi Gras Specials
Chef Fred is excited to bring you a taste of NOLA with the return of his Mardi Gras specials. With a menu like this, it's easy to see why these specials are always a guest favorite!

Red Beans & Rice - Red beans, rice and cajun spices simmered to perfection.
Cajun Shrimp - Shrimp baked in a Ruby Bloom sauce enhanced with garlic and butter and loaded with Cajun spices.
Shrimp & Crab Bisque - This perinnial favorite is rich and chockful of shrimp and crab.
Smoked Pork Loin with Andouille Gravy - A tender house-smoked pork loin in a Cajun sausage, sweet pepper and tomato gravy. Red beans and rice on the side.
Blackened Catfish with Blue Crab Stuffing - Blackened farm-raised catfish fillet with blue crab stuffing and red pepper mustard sauce. Red beans and rice on the side.
Jambalaya - Spiced catfish, chicken, shrimp and andouille sausage with herbed rice baked with peppers, onions, tomato and garlic. Red beans and rice on the side.
Barbeque Shrimp Fettucine - Shrimp baked in a Ruby Bloom sauce enhanced with garlic, butter and loads of cajun spices. Tossed with fettucine, tomatoes, arichoke hearts and spinach.
Bananas Foster - Dark rum infused bananas sautéed and layered over house made banana-nut bread and vanilla ice cream.

Mardi Gras Specials will be served Tuesday, Wednesday and Thursday, February 9 - 11 from 4 - 9 p.m. -- or until we run out!

Bloomington Brewing Company signals the cooler months with its annual seasonal brew, Java Porter. Brewer Floyd Rosenbaum's brews Java Porter with roasted barley malts for sweetness and German Select hops for bitterness. We add ten pounds of Partridge & Quigley's dark roasted Sumatran Blue Lingtong coffee to the boil kettle to give Java Porter its unique coffee aroma and flavor.

Chef Fred Manion has created a special pizza crust for our gluten-sensitive friends. Our new gluten-free crust is prepared with brown rice flour, tapioca flour, garbanzo flour, non-fat dry milk, cornmeal, yeast, xanthan gum, salt, sugar, olive oil, egg white and cider vinegar. Enjoy our gluten-free crust with any of our gourmet pizza combos or load it up with your favorite toppings to make your own gourmet pizza!

To complement our new crust, we are also offering a special Anheuser-Busch gluten-free product. Made without wheat or barley, Redbridge beer is a rich, full-bodied lager brewed from sorghum for a well-balanced, moderately hopped taste.
