When we fill the storage tanks, we mark the maximum fill of the tank and pay taxes on that to the Government. At our brewery we serve directly from the tank through the wall of the cooler into the bar. Our beer lines are very short, enhancing the flavor of our beers. The room is kept at 41-43 degrees fahrenhiet. The beers have fairly low carbonation, although we have been adding more to the Weisse and Blonde due to popular demand. The storage tanks are on an iron I-beam that is supported 3 1/2 feet off the floor. We can store kegs under this. Getting in to the storage tanks to clean them is also quite a trick.
